Winemaking
Soft pressing of the grapes with immediate separation of the must from the marc, in order to avoid the release of colouring substances – fermentation of the clean must at constant temperature – conservation of the wine in stainless steel cylinders.
Bottling
Refermentation of the wine in autoclave – maturation of the sparkling wine in the same recipient for at least six months – bottling proceedings.

Colour: pale straw-yellow.
Aroma: intense, persistent, fruity with a delicate hint of mature apricot
Flavour: soft, mellow, intense, very persistent with a pleasant and delicate aftertaste reminiscent of sweet almonds.
